This Keto Stroganoff recipe is one of my favorite dinners to make for my family: Everyone loves it and it’s quick and easy to make.
The recipe is THM S, Keto and low carb friendly and gluten free (if using all certified gf ingredients).
A Stroganoff truly is one of the most comforting dinners out there. My only problem: It’s often laden with flour… And then gets served over noodles or mashed potatoes. With all of the cream and beef in there? Not a recipe for a fuel-separated THM meal ?
That’s why I started making my favorite recipe with a low carb twist… I’m excited to share it with you!

- Beef round: I strongly recommend using a cut like beef round for this recipe. Do NOT use stewing beef here, this is a quick-cooking recipe and you need a cut that’s not tough.
- Broth: Bone broth works best due to its gelatine content. If you only have regular store-bought beef broth, I strongly recommend adding a little bit of powdered gelatine (start with 1/4 teaspoon).
- Sour cream: I prefer using full fat sour cream here because it’s the creamiest. It’s also the best choice if you want this dish to be full-on Keto.
Step by step photos
This recipe is really straight-forward. The most important step? Browning the beef in batches (can you see how I didn’t crowd my pan at all in the photo above?). And this cut of beef only needs a short cooking time, so 30-60 seconds per side is most definitely enough.
The rest of the recipe is extremely simple – sauté the onion and mushrooms until softened (check out photo 3 in the steps above to see what it’s supposed to look like), stir in broth, simmer until reduced, then add the beef back.
Take off the heat, stir in a little bit of the hot sauce into your sour cream (this is called “tempering”) and then carefully stir the sour cream into the sauce.

Tips and tricks
- Don’t rush browning the beef, please do it in batches. This is the main component of this dish, and it will NOT brown if you throw it in the pan all at once.
- Do not heat the sauce once you have added the sour cream. It will split! Just stir it in and then serve immediately.
- For the creamiest gravy, you’ll need to use bone broth (for its gelatine content), or add around 1/4 teaspoon gelatine to store-bought broth. You could also leave those out, you’ll just have a thinner gravy. Glucomannan or collagen would also be a good option to keep this low carb.
Keto Stroganoff FAQs
Yes, it is – as long as you’re using the full fat kind, which has a high fat and a low carb content. Low fat products tend to be filled with other ingredients, which push up the carb content. Read more here.
Like I said above, using gelatine (or gelatinous bone broth) are the easiest ways to thicken the stroganoff sauce without adding flour or other carbohydrates. Glucomannan or collagen are your next best options.
Yes, absolutely. Even if you mustn’t boil the sour cream, it’s already thick, so it will absolutely help to thicken the sauce, too.
Serving suggestions
To keep this a THM S dinner (eg keto or low carb), I like adding ribboned zucchini. I prefer ribbon curls over skinny zucchini spaghetti here because they more closely resemble the classic stroganoff side of egg noodles many of us have grown up with.
The dish would also go really well with cauliflower mash. I have actually developed the perfect way to make this, and you can find my cauliflower mash recipe here.
We also love a big, crunchy green or cucumber salad with a vinaigrette dressing with this. It’s a nice counterpart to the creamy sauce!

We love this recipe for a special Sunday supper or for when we have family over! It just always goes down so well.
And there really is absolutely no need for the traditional flour in the sauce – this way, it comes out just as creamy and delicious like grandma used to make!

Keto Stroganoff
Ingredients
- 2 tablespoons butter
- 1.5 pounds beef round cut into strips
- 1 onion finely diced
- 1/2 pound mushrooms sliced
- 1 (10 oz) can bone broth (OR beef broth with 1/4 teaspoon powdered beef gelatine added)
- 1 (8 oz) pot full fat sour cream
- salt and ground black pepper to taste
Instructions
- Melt butter in a wide skillet over medium-high heat. Brown beef in batches (about 30-60 seconds per side), then set aside on a plate. Tent with foil.
- Reduce heat to medium. Add onion and mushrooms to skillet and sauté until softened. Stir in broth and simmer until reduced by 1/3.
- Stir beef back into sauce and gently heat through.
- Take off the heat, stir a bit of the hot gravy into the sour cream to temper it. Stir the sour cream into the skillet until sauce is creamy. Try the sauce and season with salt and pepper to taste. Serve immediately.
